Rare Treat: Seasons 52's Copper River Salmon!
Seasons 52, the highly-acclaimed fresh grill and wine bar restaurant, is providing guests with a prized seasonal offering of one of the world’s best-tasting and nutritious varieties of wild salmon – Copper River Salmon. and Seasons 52 restaurants at the Cherry Hill Mall and King of Prussia Mall locations are participating in this offering.
Available for lunch and dinner, Seasons 52’s Grilled Alaska Wild Copper River Salmon is served over summer corn risotto with roasted asparagus, grilled red peppers and dill mustard sauce. With a limited season of just three to four weeks nationwide, the salmon will be featured on the Seasons 52 menu through July 4.
“Copper River Salmon is bright and silvery with firm, red flesh and a rich flavor making it a nourishing and delicious dish, perfect for summer dining,” said Chef Clifford Pleau, Senior Director of Culinary for Seasons 52. “Seasons 52 is proud to add Copper River Salmon to our menu, fulfilling our promise to deliver the highest quality, fresh ingredients that capture the flavors of the season.”
Beginning in May, the first salmon of the season make their way up Alaska’s Copper River, a swift, 300-mile stretch of glacier-fed water riddled by hundreds of rapids, to spawn and lay their eggs. As they travel upriver, the salmon store extra fat and oil in order to survive the long trip, making this species high in beneficial omega-3 fatty acids, which many experts believe contributes to heart health.
In addition, Copper River Salmon provides an excellent source of protein, as well as other nutrients, making it an ideal addition to the Seasons 52 menu and reflecting the brand’s reputation as a forward-thinking restaurant concept that is “right for the times,” offering guests a fresh dining experience that enables them to celebrate living well.
To complete the meal, Seasons 52’s Master Sommelier George Miliotes suggests two varietals that pair well with the Grilled Alaska Wild Copper River Salmon. From Seasons 52’s diverse international selection of over 100 wines, at least 52 of which are available by the glass, Miliotes recommends Markham Vineyards Chardonnay or Schug Pinot Noir as the perfect complement to the dish’s rich, fresh flavor.
Seasons 52 currently operates 17 locations in ten states across the country and will open additional restaurants in McLean, VA (Tysons Corner Center) in summer 2011; Naples, FL (Mercato Center) and Jacksonville, FL (St. Johns Town Center) in fall 2011; Oak Brook, Ill (Oakbrook Center) and Garden City, NY (Roosevelt Field) in spring 2012, and Santa Monica, CA (Ocean and Broadway) in fall 2012.

Bravo, Seasons 52!
The new Seasons 52 Restaurant at the Cherry Hill Mall doesn't officially open till Monday (March 23) but we've already been inside this beautiful eatery where we met with General Manager Shannon Early and sampled many of the dishes. And we can report to you that Seasons 52 is a fresh food/fresh eating delight!
From the minute you approach Seasons 52 you will feel special since the restaurant provides free valet parking and welcomes you with an entranceway that is inviting and soothing.
Inside, a spacious, airy feeling prevails with teak-toned wood, open fireplace, natural stone, gentle golden lighting and teal and earth tones. Both the main dining room and the bar room feature many booths and banquettes for comfortable seating and the chef's table up front is perfect for a small, intimate party. Even though the open kitchen runs along one entire wall of the dining room, the room is not noisy or shrill. Private party rooms are also available.
Live music is featured every night at Seasons 52 in the bar room. The bar is a large free-form pool shape with the music and the bartenders in the middle. Along the walls of the bar room are many cozy booths. It's a natural hub of activity and just perfect regardless of whether you're arriving alone or with friends.
The menu at Seasons 52 changes with the season and the chef features special dishes every week.
Dinner entrees (with sides) range from $16.00 to 27.00. Dinner salads are available in small ($5.00 - $7.00) or entree sizes ($12.00 - $15.00).
Flatbreads are among the best appetizers. These exceptionally thin crispy breads are extraordinary.
We sampled the gulf shrimp cocktail (large and firm), garlic chicken flatbread, baby spinach salad and mixed greens salad. Salads were beautifully prepared with a light vinaigrette dressing.
For entrees we tried the tiger shrimp penne pasta (like a pasta primavera with nice-sized shrimp) and the char crusted filet mignon (perfectly prepared).
To top it all off Seasons 52 offers a tempting selection of mini indulgences ($2.50 each) that include chocolate, mocha, cheesecake, pecan and key lime treats, among others.
The wine selection is outstanding and throughout the evening service was superb.
And here's one of the best parts: Every entree at Seasons 52 is 475 calories or less. Every entree!
The restaurant uses no cream or butter in cooking and nothing is fried.
Plus, the place is also open for lunch at equally attractive prices and once the weather gets a bit warmer outdoor seating will be available as well.
For South Jersey, Florida's Seasons 52 represents a whole new approach to dining.
You're gonna love it!
BTW: Our thanks to GM Shannon Early; our server Brett; and Rachel Summers, Cathy Schwartz and Michael Cianfrone of The Star Group for their kindness and attentiveness. Bravo!

Seasons 52: Fresh, Delicious, Friendly, Delightful

| Roasted Artichoke-Stuffed Shrimp with wilted leaf spinach, pasta pearls and clam cioppino sauce |
Over the weekend we dined at Seasons 52 and once again enjoyed their fresh, beautifully-prepared food, fine service and appealing ambience.
Ever since Seasons 52 first arrived in the Philadelphia area it's been a winner with us. But here's the thing: The restaurant has maintained its high standards. There's been no atrophy whatsoever. In fact, this place just seems to get better every time we return.
We started with the Grilled Steak and Cremini Mushroom Flatbread with fresh spinach and Wisconsin blue cheese. We don't know who invented flatbreads but it may as well have been Seasons 52. They've certainly perfected the flatbread. They're crisp, tasty and make for a remarkable prelude to your dinner.
We then went on to the Organic Arugula Salad with truffle dressing, Portobello mushrooms and Parmesan cheese. Well, this is not the arugula you find in your local supermarket. This salad actually makes arugula something to look forward to. It is a perfect medley of flavors.
We selected two seafood entrees: Roasted Artichoke-Stuffed Shrimp with wilted leaf spinach, pasta pearls and clam cioppino sauce and the Caramelized Sea Scallops grilled and served with roasted asparagus and tomato-mushroom pearl pasta. The scallops were plump, firm and juicy. And the artichoke stuffing actually rivaled the significant, tempting shrimp. The presentation was beautiful (see the actual photos of our plates above) and even the vegetables were fresh and tasty.
Then of course we completed our dinner with those famous Season 52 mini-indulgences. This restaurant pioneered this unique dessert. The whole concept of the mini indulgence is just that- indulgence in a smaller portion size. These desserts are designed to feature high-impact flavors and top quality ingredients, such as Belgian Callebaut Chocolate. Season's 52 makes the real thing… dessert… in all its decadence, and then they put it into a shot-size glass. So guests get to have all of the pleasure and none of the guilt- along with the chance to try more than one in a visit.
In the Philadelphia region you can find the original Seasons 52 at the Cherry Hill Mall. Another restaurant is located at the King of Prussia Mall in suburban Philadelphia.
Steve, our waiter at the Cherry Hill location was a delight -- thorough, attentive and personable. And we were so happy to meet the restaurant's manager and other members of the staff.
Seasons 52 is a fresh grill and wine bar that invites guests to discover the sensational flavors of a seasonally-inspired menu and award-winning international wine list in a casually-sophisticated ambiance. The menu really does change with the seasons and the new fall menu features many seasonal favorites.
Seasons 52 has 21 locations. Click here to find one near you.
We promise: You won't be disappointed.

Scoop On Mall Eateries
We can now report exclusively on two more reataurants that are coming to the Cherry Hill Mall. In addition to Maggiano's Little Italy the mall will soon welcome California Pizza Kitchen (CPK) and Seasons 52.
Maggiano's is expected to open in time for the holidays. The rest will follow.
California Pizza Kitchen is a leader in authentic California-style cuisine with a recognized consumer brand, an established, loyal customer base and more than 240 restaurants.
CPK has introduced pizza flavors and tastes from around the world, from Thai to Jamaican Jerk…all on a pizza. All of the innovative pizzas are creatively designed on a delicious crust, and hearth-baked to perfection. Also served are distinctive pastas, salads, soups, appetizers and desserts, including our Chicken-Tequila Fettucine, BBQ Chicken Chopped Salad, Tortilla Spring Rolls and Key Lime Pie.
Seasons 52 is a casually sophisticated grill and wine bar that invites you to discover the sensational flavors of a seasonally changing menu. Seasons 52 is new to the Philadelphia areas. Currently the Seasons 52 restaurants are located in Florida and Georgia (Boca Raton, Palm Beach, Buckhead, et. al.) The restaurant's passion is to serve highly flavored meals that are healthy and focus on the best of each season. They use natural cooking techniques such as grilling over open fires to give our food exceptional taste with fewer calories than similar restaurant meals. To complement the flavor and aroma of the meal, Seasons 52 offers an adventurous international wine list of more than 120 outstanding wines, with 60 available by the glass.
Seasons 52 says it offers a warm and welcoming adult atmosphere that you'll want to return to often.

Restaurants: Seasons 52 Remains A Personal Favorite
Although we have a wide variety of restaurants to chose from, Seasons 52 continues to remain afrequent destination.
We dropped by Seasons 52 at Cherry Hill Mall recently and found that everything we love about this unique restaurant is intact: the inviting atmosphere, the friendly staff and the tempting menu, with every dish easy on both your calorie count and your wallet.
Since we were there for lunch, we enjoyed one of our favorite dishes: the grilled portobello turkey burger under melted mozzarella with sliced tomatoes on a whole wheat bun. The dish is accompanied by a delicious organic mixed greens salad with a light dressing. If you think a turkey burger can't be mouth watering, you haven't tried the turkey burgers here.
For dessert we picked two of the restaurant's distinctive min-indulgences. You can pick from eight indulgence flavors (everything from key line to peanut butter chocolate to pecan pie with vanilla mousse) and they are all superb -- and just enough for a sweet taste after your meal.
While we were at Season's 52 we were fortunate enough to meet and chat with Managing Partner Kerry McNulty who is overseeing the Cherry Hill operation and we also chatted with the restaurant's sous chef. The entire staff is excellent.

Fine Dining, No Pomposity!

We were invited to dine with George Miliotes the other evening and boy, are we glad we accepted the invitation.
George sat at the head of the table in an intimate room room graced by rich woods, natural stone, subdued lighting and glistening china and glassware.
Upon arrival we were greeted with ripe plum tomato flatbread with roasted garlic essence, sweet basil and Parmesan cheese. We also sampled spicy pork taco flatbread and washed it down with our first wine of the evening: Selbach-Oster Riesling Kabinnett, Mosel '07.
George, who is a Master Sommelier told us the whole story behind the making of this wine and explained that it is a particularly good choice with the spicy flatbread.
Then, we toasted each other with raspberry sweet teatinis. Not as sweet as you might expect, these vodka martinis are made with sweet tea and raspberry puree.
After our toast, it was time executive chef Anthony O'Neill to bring us the evening's opening dish: Alaskan copper river salmon with summer corn risotto, fresh asparagus, roasted peppers and dill sauce. This was combined with Indaba Chardonnay West Cape '08, an outstanding though nonetheless economical wine available in most wine and spirits shops for under $10 per bottle.
Chef O'Neill moved along to caramelized sea scallops grilled and served with sun-dried tomato pearl pasta. And George Miliotes matched this with Sellbach-Oster Pinot Blanc, Mosel '06, a wine that goes particularly well with a rich seafood such as the plump scallops.
Next came grilled Colorado buffalo steak. We were surprised at the tenderness of the steak; very tasty! This was paired with wines that George describe as "joyful and yummy" -- Planeta Segreta Nero d'Avola/Merlot and Leanne Vineyard Pinot Noir, Rouge.
Obviously, as we moved along we went easy on the wines, lightly savoring each one since we suspected that more was on the way. And, it was.
Our grilled rack of New Zealand lamb came with red bliss potatoes, sauteed spinach, balsamic red onions and Dijon sauce. George teamed it with Honoro Vera Merlot, Jumilla '07 and a wonderfully fragrant Retromarcia Sangiovese Chianti Classico '06.
How could we possibly bring this evening to a close?
Obviously, we needed a good dessert wine and George presented "possibly the best dessert wine vintage ever produced by Germany" -- Selbach-Oster Bernkasteler Riesling Auslese, Mosel '06. And we enjoyed this with a variety of mini indulgences.
Now -- here's the really important part of the whole story: All of the wines and all of the dishes that I've just described are available at the beautiful new Seasons 52 restaurant in Cherry Hill and they are all temptingly affordable and delicious.
Seasons 52 Beverage and Hospitality Director George Miliotes has traveled the world finding the very best vineyards and finest wines. And Executive Chef Anthony O'Neill has produced a menu that is original, memorable and remarkably healthy.
Culinary triumphs aside, you won't find an effete attitude or even a bit of snobbishness at Seasons 52. Friendliness and accessibility are the watchwords here.
Every dish and every vintage will be explained to you if need be and you can taste the wines before you make your choice. In fact, Seasons 52 has 23 different varieties of wines available by the glass.
"We want people to relax and enjoy the food, the wine, the whole experience," George Miliotes explains.
And indeed we did - and so will you!
